  1. I’ve always been told that you should score the skin first so the fat can more easily come out. He doesn’t do it here. He still seems to get plenty of fat though, maybe the ‘starting cold’ method works just as well.

  2. @Doxi99 You *can* actually eat turkey and chicken if it’s pink. Just not too pink/red. There’s a chart floating somewhere online about this, but I can’t be bothered to look it up. A lot of people think that any pinkness in their white meats means it’s undercooked, which actually leads to its overcooking.
